On-the-go Protein Powerhouse



Perfect for almost any meal or snack, this simple protein-packed on-the-go meatball rocks the house! We especially love them for a quick post-workout/breakfast. 


The possibilities are endless, so get creative, this recipe is designed to be tweaked for variety. For example, feel free to leave out the grated sweet potato if you're trying to cut out carbs, or add in some spinach to get in some greens!


Mix and roll your meatballs by hand, 'cause that's "how we do." Don't get too hung up on size. Bigger than a ping pong ball, yet smaller than a tennis ball. 


We always try to keep the mixture as simple as possible; making a complex mixture can sometimes be tasty, but we're going for fast and easy here.


Perfect Protein Powerhouse Meatballs


Ingredients:

  • 1 Sweet potato, grated

  • 1 Small onion, finely diced

  • 1/2 Cup Almond flour

  • 1 Garlic clove, minced

  • 1/4tsp Salt1/4tsp Pepper 

  • 2 Large Eggs, beaten

  • 1lb Ground beef (~85%)

  • 1lb Ground turkey


Instructions

  1. Pre-heat oven to 425F. 

  2. Line a baking sheet with foil and oil lightly to prevent sticking (we like to use coconut oil spray here).

  3. Combine and mix together the sweet potato, onion, almond flour, salt, pepper, and garlic in large bowl. Then, add in the eggs, beef, and turkey. Mix gently with your hands, so as to not overwork the mixture while still evenly mixing all the ingredients.

  4. Roll the mixture into about 2" diameter balls and place on the baking sheet, leaving at least an inch between meatballs. 

  5. Place baking sheet in oven on the center rack for approximately 20 minutes, or until the meatballs reach an internal temp of 165F. 

  6. Allow to cool before handling and storing! Enjoy!
